Penne with Cherry Tomatoes, Basil and Mozzarella

Penne with Cherry Tomatoes, Basil and Mozzarella

1 pound ripe and juicy cherry tomatoes, rinsed, dried and cut in half
1/4 cup extra virgin olive oil, plus more for drizzling over pasta when done
1 tsp coarse salt, sea or kosher
4 cloves garlic, peeled
1 pound penne
10 fresh basil leaves
1/2 lb bite size fresh mozzarella, cut in half

Toss tomatoes, oil, salt in large bowl. Whack garlic and toss into same bowl. Let marinade at room temp, toss once or twice for 30 min. Cook pasta as directed, cook semi=covered, stir occasionally 10 – 12 min. Remove garlic from tomatoes, toss in basil. Drain pasta, add to bowl toss till well mixed. Gently stir in cheese and serve.
