Hash Brown Casserole

Ever been to Cracker Barrel? If you have, you might have tried their hash brown casserole. This is as close as I have been able to get to their secret recipe. It’s pretty darn good. We ate it all in a DAY. Hash Brown Casserole

2 lb. package shredded hash browns
2 cups shredded 2 % Colby cheese
1/4 cup minced onions
1 cup skim milk
1/2 cup beef stock*
2 tbsp olive oil (use butter if you don’t mind the calories)
1 healthy dash of garlic powder or 1/2 tbsp. minced garlic
1 tsp sea salt
1/4 tsp fresh ground pepperPreheat oven to 425 degrees F.

Combine the hash browns, cheese, and onion in a large bowl.
Combine the milk, beef stock, 1 tbsp. of olive oil, garlic powder, salt, and pepper in another bowl.
Mix until well blended, then pour the mixture over hash browns and mix well.
Heat the remaining butter in large, ovenproof skillet over high heat.
When the skillet is hot, spoon in the hash brown mixture.
Cook the hash browns, stirring occasionally, until hot and all of the cheese has melted – – this took me 5- 7 min.
Put the skillet into the oven and bake for 45 to 60 minutes or until surface of hash brown is dark brown.

*You can cut a few more calories by using vegetable stock – but the taste will be a tiny bit different.I am also willing to bet they use lard in the real Cracker Barrel recipe instead of butter because the menu says it contains pork products. Take that, arteries!

Additionally, this becomes a baked version of my “Skillet” if you just add some veggies (green pepper, red pepper, mushroom -whatever you like and some sort of cooked meat like ham or sausage, chicken.
